It had been a long and tiring day. Needed comfort food but
thinking of something quick and easy to make that would go well the fried pork
belly!
Checked what was inside our fridge: left-over rice, spring onions,
tofu and eggplant. Also, in our pantry was an unopened jar of bagoong!
Voilà ! Bagoong fried rice is on the menu tonight!
Simultaneously, fry tofu and eggplant if serving.
Last but not the least, prepare the dipping sauce or saw-sawan.
Mix together soy sauce, onions, chilies and lemon!
Travis hates bagoong as you all know, that’s why when he asked
what’s for dinner, (Achi) Leica replied bagoong rice and fried pork to tease
him. Surprisingly he ate 3 servings of it! ☺☺☺
Yummy in the tummy!
