Bagoong Fried Rice


It had been a long and tiring day. Needed comfort food but thinking of something quick and easy to make that would go well the fried pork belly!

Checked what was inside our fridge: left-over rice, spring onions, tofu and eggplant. Also, in our pantry was an unopened jar of bagoong!
Voilà! Bagoong fried rice is on the menu tonight!


BAGOONG FRIED RICE


2 tbsp cooking oil
6 cups left-over rice
3 tbsp Dagupan Spicy Bagoong
1 medium onion, chopped
5 cloves garlic, chopped
Spring onions (optional)
Salt and pepper, to taste

Sauté onions and garlic in oil.
Once fragrant and onions are slightly transparent, add bagoong. Mix well. Add rice and mix well, ensuring all ingredients are incorporated. Add a dash of salt and pepper. Serve hot and garnish with spring onions on top of the rice.


Simultaneously, fry tofu and eggplant if serving.

Last but not the least, prepare the dipping sauce or saw-sawan. Mix together soy sauce, onions, chilies and lemon!

Travis hates bagoong as you all know, that’s why when he asked what’s for dinner, (Achi) Leica replied bagoong rice and fried pork to tease him. Surprisingly he ate 3 servings of it! ☺☺☺
